Its hardness is 57-59 degrees on the Rockwell scale.The wooden handle of the closing knives gives the user a specific feeling in the hand that is completely different from knives with a plastic handle. Most often beech is used for production. However, the more exotic bubinga with its dark brown to red colour is also very popular and smooth olive is also available.
