The knife has a slightly curved 70 mm long head, made of martensitic X50CrMoV15 stainless steel with high chromium content. A blade made of such steel cuts efficiently, is hard, resistant to wear and corrosion, and is easily sharpened with an ordinary kitchen sharpener. X50CrMoV15 steel is perfect for kitchen knives, the weaker retention of the cutting edge is compensated by the ease and speed of sharpening and above-average cutting performance.
